WE COOKINʻ IN HAWAIʻI: CARIBBEAN & PACIFIC CULINARY FUSION

What do Caribbean and Pacific Islanders have in common?
Letʻs see how much we can find out. Who can name a main staple for both Caribbean and Pacific Islanders?

WE COOKINʻ: ECLECTIC VINCY CUISINE is currently a returned guest in the Kingdom of Hawaiʻi, an archipelago in the middle of the Pacific Ocean. In 2018, after a period of 30 years absence from the ʻaina (land) and ʻohana (family); we made a choice to respond to the call of itʻs natural environment and spiritual forces. Since that time to now, we have been exploring the islands of Hawaiʻi, Kauaʻi, and Oʻahu; in search of the common denominators which bring us together as a Human family. In this Raspect, I am learning more about Hawaiian Culture, History, Language and way of life.
Where am I?


As Creator/Producer of WE COOKINʻ, I hope to utilize prior knowledge of my own Afro-Caribbean origin; as a tool to guide my comparative study of Pacific and Caribbean culinary styles, foods used in daily life,  in stories told and much more on this blog. As most artists who are passionate about creating art know, it a process, a work in progress. WE COOKINʻ is my canvas and the local culinary artists, the local foods and products they utilize in their recipes, the history and relevance of the foods used in these recipes, will all encompass the culinary art that will unfold in these pages.

Guess Where?Itʻs almost 5:00 A.M. am up and I decided to take the time to share these thoughts. Consider this my 2020 introduction to Hawaiiʻs culinary artists, and  the follow up on WE COOKINʻ: ECLECTIC VINCY CUISINE. It is with love I share these thoughts. Inspired by all those family, fans, friends and supporters of WE COOKINʻ, who stay in touch or are interested in seeing new episodes. May it be Our Creatorʻs Will that I live to fulfill the production of new episodes. Till such time, I will continue from time to time keeping you informed of our progress. WE COOKIN' UPDATE AUTUMN 2016

WE COOKIN' INTERNATIONAL TOUR

Blessed love to all  family, fans, friends, sponsors, supporters and viewers of We Cookin' Eclectic Vincy Cuisine. We have been for the past 6 months traveling outside of St. Vincent & the Grenadines; in search of new locations, markets and sponsors for We Cookin'. We take this moment to share and update you of our progress. This October, marked the 6th year of airing We Cookin' in St. Vincent & the Grenadines. Thanks to Caribvision, we have for the past 3 years been aired and continue to be viewed on 22 Caribbean stations, 3 US, 1 Canadian and 1 UK station. Due to this great exposure, and continued support of our family, fans, friends, and viewer; We Cookin' has recently received an innaugural award from The Vincentian Association of Artists, Writers and Producers Inc. ; as the "Best Local Television Series, of any-kind, Drama, Comedy, Game, Cuisine and Culinary, Travel, Learning and Entertainment". What a great honor this is for us, as it would not have been possible without the support of Our Creator, and all of you who love We Cookin' Eclectic Vincy Cuisine.

WE COOKIN' WORK IN PROGRESS NEW SEASON 2016 UPDATE

CELEBRATING A NEW YEAR WITH A BANG ON WE COOKIN!

Although I have been somewhat delinquent in posting an update for We Cookin' on this blog; am wishing a very special New Year 2016 to all our family, fans, friends, sponsors, and supporters of the televised program. Grateful that We Cookin' is about to reach it's 6th year of production in 2016. As I have always maintained, our program is a work in progress. In this Raspect, we always welcome your contributions, expertise, and constructive critique of the program.  While we are preparing to film another new season for 2016, Carib Vision, will be airing our Vintage We Cookin' episodes. 
The Schedule is still the same airing the following days and time:

Had to take this moment to share the most AMAZING past week of my life as Goddess Living the Human Experience. If the saying that "...a picture says a thousand words..." is true; then these pics will basically describe what last week was like for me. Am so thankful for the Divine Forces in my life. However challenged I may be, by the mundane world at times; the Iniverse has a way of easing the pain and clearing the path to joy and tranquility in my life. Two important events worth noting here.
The first being the cosmic connection with Claira Hermet , a brilliant, courageous and creative artist, who is traveling the globe; making very real human connections as she documents her journey through this blog "My Life Your Hands" Check this link to her blog. http://www.clairahermet.co.uk/videos-2/
We met through a mutual friend Sophie Goddard, atWhiteSands CottagesClaira, a Vegan, was interested in preparing one of the recipes from We Cookin'. I was thrilled to learn that someone visiting St. Vincent, read my "We Cookbook " and wanted to try my recipes. Usually, the culinary artists appearing on We Cookin', comes with their own recipes they want featured. If I recall clearly Sasha King was the first to do her variation of my Bouillon, when I filmed in New York last year. Now, Claira will be my first for SVG using one of my recipes.
Let me tell you how the day was spent with her. It was like being with a younger sister, friend, daughter, mentor and therapist all in one. For reasons beyond my control, I could not have We Cookin' videographer Silbert IceKid Defreitas film that day. Fortunately, Claira and I both have cameras; so we went ahead into production, each using our respective equipment
. The first thing i got from Claira was when all else fails, Google; and if that doesn't work, be patient and try using my own brain and hands again. Next, from our conversations throughout the day, I realized that I have to make a greater effort at not being so judgemental; and to be more tolerant of those who are, cause I have been down that road many times, and slowly finding a clear path out. Overall, the time spent withClaira culminated in a feast, which was ready to be shared with Sophie, and her Princess "Irie" Ira. Claira prepared her version of my "JAMAICAN CALALOO/AYISIEN ZEPINA WITH PUMPKIN" p28-29 of "WE COOKBOOK: EASY & HEALTHY ECLECTIC VINCY RECIPES VOL, I" Sold in SVG at Gaymes Books & Jujube Book Stores, Doc Adams at Cruise Ship Terminal.
Since she could not find enough (Amaranth) Jamaican Calaloo, she used the local Vincy Calaloo as a substitute, and she added shallots instead of cives. We were just improvising with my recipes cause some ingredients listed in the cookbook were missing. For example, i did not have beets for my "BOUNTIFUL BREADFRUIT SALADE" p8-9; but Claira added chopped tomatoes and I made a Balsamic dressing. We had the palate bursting with different delicious flavors. I taughtClaira, how to fry roast breadfruit and to make "Banan Pézé" which is the Ayisien version of "Tostones" or fried green plantains. We used our not so ripe mangoes to make a "Mango Chow", also used the ripe ones, combined with ripe paw paw and passion fruit to make a delightful fruit salad, served with coconut cream topped with molasses. We all agreed that preparing, sharing and eating food together can be a great way to bring balance, harmony and Inity, across communities that are already polarized by class, ethnicity, gender, race, religion, politricks, or whatever conditions existing that makes humans sometimes so miserably unhappy. About last Tuesday, It was a culinary love feast, heartfelt thanks to Sophie, "irie" Ira of WhiteSands Cottages, & "My Life Your Hands" Claira Hermet "; for making We Cookin' a part of their day. #Grateful

WE COOKIN' ECLECTIC VINCY CUISINE SEASON 5

We Cookin': Eclectic Vincy Cuisine #grateful to all our families, fans, friends, sponsors, supporters and viewers.

October 27th, 2014 marked our 4th year of producing and airing We Cookin': Eclectic Vincy Cuisine. Since then we finished 12 episodes for Season 4; aired on Carib Vision until June 2015. More recently we completed an additional 12 episodes for Season 5; which is currently airing on Carib Vision. 
It has been a great experience working with my new Production Team, Videographers, Daffodaleia Williams & Silbert Defreitas of PGX Prographix Design & Video & Graphic Design Studio. They joined Wondo Ghenet, in August 2014; and have been extremely creative in filming and editing each episode of the 24 episodes done for this year. We have had an amazing time working together, filming in various places throughout the island. Since I have not had the time to update this blog, I am taking this opportunity to provide some snippets of year 2014-2015 on We Cookin'.

SUMMARY OF SEASON 4 & PREPARING SEASON 5

Grateful for an awesome Season 4 on Carib Vision. We opened last year during our October 2014 4th year Anniverssary on Air. Forever thankful to Our Divine Creator, and all our family, fans, friends, sponsors(Special thanks to C.K,Greaves & Co. Ltd. for being No 1 for We Cookin' since 2010). Greetings to all We Cookin' Eclectic Vincy Cuisine family, fans, friends, sponsors, supporters, viewers and constructive critics. We are so grateful to Our Creator for the breath of life and having celebrated our 4th year of Producing and Creating fresh episodes of We Cookin'. We are ever mindful of the love and support of all our sponsors, our viewers and the talented Culinary artists who have appeared on the program during these four years. As we move into the 5th year of Production, we acknowledge again our Fresh New Production Team at Prographixx, namely Silbert IceKid Defreitas and Daffodaleia Williams, whose creative and open minds, helped raise the standards for We Cookin's Season 4 on Carib Vision. Currently, we are preparing to make Season 5 even more amazing, using the fresh local bounty of St. Vincent & the Grenadines' Agricultural and Marine produce; and featuring familiar talent and new faces who love to eat, and share their favorite recipes. SEASON FOUR REPEATS ON CARIB VISION

PREPARING BREADFRUIT SALADE II
BREADFRUIT SALADE II

1/4-1/2 BOILED OR ROASTED BREADFRUIT
1 LG. FRESH CUCUMBER
3 SMALL TOMATOES
2-3 GARLIC CLOVES
1 ONION
1/4 CUP OF CHOPPED RED HYBISCUS LEAVES
1/4 CUP OF MORINGA BLOSSOMS
1/4 CUP OF FRESH LOCAL LIME JUICE
1/4 CUP LIQUID AMINO ACID OR LOW SODIUM SOY SAUCE
1/4 CUP FRESH LOCAL COCONUT OIL


PROCESS:
Wash, peel and cut the cucumbers,  tomatoes, red hibiscus leaves, cut and separate the mooring blossoms from the stems. Chop garlic cloves into fine pieces. Chop finely the onion. Put all aside for the time.
In a small mixing bowl; squeeze and strain the juice of 1-2 limes or lemon. Add ¼ of coconut  or olive oil,  liquid amino acid or low sodium soy sauce, chopped garlic,  and mix with a wisk until all ingredients are combined into a dressing consistency.  Set aside for later use.

Using your left over boil or roast breadfruit; remove any skin and cut breadfruit into small to medium size cubes .  This should yield at least a 16oz. of the cubed breadfruit. Place in a large salad or mixing bowl. add  the cut or cubed cucumbers and tomatoes, to the breadfruit, add  chopped parts of the red hibiscus, pour dressing over salad and stir with a salad spoon and fork. Make sure you to allow the cut veggies, chopped leaves and blossoms, and dressing to mingle with breadfruit without smashing breadfruit chunks. 
Garnish salad platter or bowl with a lettuce or pack choi leaf, place a heaping spoon or two of the breadfruit salad, garnish with a sprinkle of the Moringa leaves and serve.
